I’ll be making this Jerk Chicken Dip for the 2017 Fiesta Bowl on New Years Eve Day!

Jerk Chicken DipAh Jerk chicken dip! One of my all time favorite vacations was to Jamaica. We stayed  with the Sandals resorts. As if it was not already heaven on earth the trip was made more amazing with the Sandals stay and play options. You can stay at any one Sandals resort in Montego Bay but they will shuttle you to play at all 3 from 8am to 2am daily. For my husband, and myself 3 nights 4 days was just about $1,200.00. So if your looking to “really” treat yourself in the new year I “highly” suggest it. The cost includes all food, and drinks, yes including the bar.  Free room services and lot’s of free actives.

Want to see a fashion show at The Royal Caribbean no problem they will shuttle there, Want to visit a  restaurant at  the Sandals Inn or drum show at the Montego Bay,  just hop on and get whisked away to your next activity or relaxing location. All amenities and activities are yours for the taking FREE of charge included with your stay at any of the above Sandals resorts. However, when your having so much all inclusive fun you work up quite an appetite.

This is the resort we stay at when we go. The Sandals Inn -AKA- The Carlyle Inn. A travel tip: When you stay here you get a cheaper stay per a night and it’s right in the mix with the locals. Yet because of the stay and play you don’t miss any perks of the higher cost rooms at the other locations. Click the photo above view packages!

Every night before dinner I ate the same meal. How I managed to lose 7pounds on the vacay is beyond me LOL! No matter what I ate for breakfast, lunch or dinner every night before calling it a wrap we would visit the grill at the Sandals Inn and have Kneil whip us up jerk chicken, a fresh salad, and some home fries with blue cheese dressing.  I know blue cheese dressing on fries sounds a bit off to some but trust me it’s one of those once you go, you know type of finds. {Wink, Wink}

We are huge Ohio State Football fans, and I want to whip up something different to munch on during this years Fiesta Bowl game. Kick off is at 7:00pm, and I’m feeling a bit Jamaica home sick. I think a pot of jerk chicken dip with chips, along with a few other party dishes is just what I need for the game time dinner! The recipe, and directions are below. Jerk Chicken Dip

Jerk Chicken Dip MarinadeMeat

Condiments

  • (Optional) 1/2 cup Ranch salad dressing (I suggest you whip up some homemade Hidden Valley NOT store bought)

Dairy

  • 3 tbsp Blue cheese crumbles
  • 1 1/2 cups of Monterey Jack –OR-Cheddar cheese
  • 1 (8 ounce) package Cream cheese
  • 3Tbsp of plain Greek yogurt IF needed for cool down

Directions

1 Heat chicken and Buffalo sauce in a skillet over medium heat, until heated through. Make sure to break up the chicken so there are no big chunks.

2 Stir in cream cheese and ranch dressing. Cook, stirring until well blended and warm.

3 Stir in shredded cheese. Pour into a shallow dish or pie pan and sprinkle with blue cheese crumbles.

4 Microwave dip until the blue cheese melts; about 30 seconds. We usually only sprinkle blue cheese on half of it for those who aren’t blue cheese fans. Serve with chips for dipping.
